Too many tomatoes and not enough time to eat them? The tried-and-true way of saving those end-of-the-season tomatoes is to purée them, then freeze in 1/2-cup portions. However, my friend Lee Janvrin taught me a neat trick and that's to freeze them whole. Yes, it’s true that chilling tomatoes reduces their flavor, but Lee’s frozen, vine-picked fruit are better by far than any wintertime, flavor-wimpy hothouse pretenders.

Here’s Lee’s technique: Place fresh-picked, ripe but firm tomatoes in a freezer-weight plastic bag and freeze until solid. If you want the tomatoes cored, do so before freezing, but don’t wash them. When ready to use, briefly run the frozen tomato under lukewarm (not hot!) water, which not only washes the tomato, but loosens the skin. Use your fingers or a paring knife to pull off the skin, then add the frozen tomato to a sauce, soup or any other dish where you would normally use puréed tomatoes (freezing breaks down the tomato’s cells so that they don’t hold their shape). One caveat: thawing the tomatoes before using them allows much of their juice to escape. By the way, I’ve since discovered another use for frozen tomatoes—they make a killer Bloody Mary!

Ga dus op zoek, maak er een quest van, zoek en vind de allerlekkerste tomaten. Op boerenmarkten, natuurwinkels bij specialiteitenwinkels. Biologische tomaten met smaak. En proef hoe weergaloos lekker een tomaat kan zijn (de datterino, de groene mirinda). Het voorgerechtje streelt dus pas je tong als je quest goed en echt was. Op tomatenjacht!

History of the Tomato -

The tomato originated from South America, was taken to Italy and probably came back to the colonies after that. Thomas Jefferson was one of the first to grow tomatoes, which were called "Love Apples" at the time, and give them a try as a vegetable. As to whether it is a fruit or vegetable, it is actually both. Botanically it is a fruit, horticulturally and legally it is a vegetable.

AMITOM is an association grouping professional organisations of tomato processors in the Mediterranean region.AMITOM is based in Avignon (France). Its current President is Duncan Blake (Turkey) and Vice-President is Marco Serafini (Italy). Mrs. Sophie COLVINE is General Secretary..For more than 25 years, this international association has been collecting and storing technical and economic data and information on the processing tomato field, from research to final sale.

To that effect, AMITOM intervenes in various ways, and regular meetings bring together the delegations of the member states that constitute the executive committee. AMITOM now includes eleven member states, and three associates members:

Ø 5 EU countries:

Spain: Spain is represented by AGRUCON, the Spanish Association of Vegetables Processors based in Madrid.
France: France is represented by SONITO (National Interprofessional Tomato Society), who gathers the forces of the French tomato processing industry together (growers, co-operatives, private processors).
Greece: The Greek industry is represented within the AMITOM by PEK, the Greek Canners Association. Established in 1945, it is a founding member of AMITOM. Its 15 members companies account for more than 80 % of the total Greek production.
Italy: Italian private companies are today represented in AMITOM by two associations: AIIPA, based in Milan, for northern regions, and ANICAV based in Naples for southern, while co-operative processors are represented by FEDERAGROALIMENTARE, headquartered in Rome.
Portugal: the Portuguese tomato industry is represented by AIT.

Tomatoes are now eaten freely throughout the world, although their seeds cannot be digested and pass straight through human intestines. Today, their consumption is believed to benefit the heart. Lycopene, one of nature's most powerful antioxidants, is present in tomatoes and has been found to be beneficial in preventing prostate cancer, among other things.
Botanically a fruit, the tomato is nutritionally categorized as a vegetable (see below). Since "vegetable" is not a botanical term, there is no contradiction in a plant part being a fruit botanically while still being considered a vegetable.
Tomatoes are used extensively in Mediterranean and Middle Eastern cuisines, especially Italian ones. The tomato has an acidic property that is used to bring out other flavors. This same acidity makes tomatoes especially easy to preserve in home canning as tomato sauce or paste. The first to commercially can tomatoes was Harrison Woodhull Crosby in Jamesburg, New Jersey. Tomato juice is often canned and sold as a beverage. Unripe green tomatoes can also be used to make salsa, be breaded and fried, or pickled.
The town of Buñol, Spain, annually celebrates La Tomatina, a festival centered on an enormous tomato fight. Tomatoes are also a popular "non-lethal" throwing weapon in mass protests; and there is a common tradition of throwing rotten tomatoes at bad actors or singers on a stage, although this tradition is more symbolic as of today.

CROP HISTORY AND DEVELOPMENT

Wild type tomato species are thought to be native the region of western South America and specifically in the dry coastal desert of Peru. First historical reference in Europe to the tomato was a yellow fruited type in Italy in 1544, cultivation in Germany in 1553. The Italians may have acquired it from the Turks. The tomato may have first been grown in Spain then taken to Italy where it was called "pomi d'oro" or golden apple, because of its yellow color. The French called it "poma amaris" or apple of love. The American Indians used the name "tomatl." The tomato was not very popular until the 18th century mainly because of rumors that had labeled it as a poisonous fruit. It is suggested that certain famines during this century forced people to try this plant, because by the middle of the century the tomato was much more popular. The tomato was introduced into the United States in 1710. By 1779 it was used in catsup in New Orleans. Thomas Jefferson grew tomatoes in Virginia. But as late as 1900 the tomato was still considered poisonous. George Washington Carver was known for standing in front of crowds and eating tomatoes, trying to introduce tomatoes into the diet. The tomato originated in South America due to the wild species found from Ecuador to Chile. This means the tomato traveled from South America to Europe before arriving in the United States. L. esculentum is probably derived from Lycopersicon pimpinellifolium which is indigenous to Peru and Ecuador. L. esculentum var. cerasiforme (cherry tomato) is considered a wild plant in the tropics and subtropics. There is also evidence that tomatoes originated in Mexico. These tomatoes show a great diversity in size and shape and include all color types known which are pink, red, and yellow. The cherry tomato is widely used in Mexico and has many Indiana names. The Nah uatl language of Mexico used the name "tomatl" which has followed the plant through Europe and South America. Mexico would be a logical origin since Cortez conquered Mexico in 1519, tomatoes could have easily found their way to Italy by 1544. There are still arguments as to the origin of the tomato.

How the Tomato War started

As participant on the fluxlist blog (http://fluxlist.blogspot.com/) Litsa Spathi (alias Nobody)contributed lots of texts and visuals for this online platform. In September 2006 she posted a digital image with on it a tomato. Several days later Alan Revich, another participant on the fluxlist, copied this image, changed it and placed it again on the fluxlist. The Tomato War was started with this small incident. Red circles with nothing in it versus Tomatos with something in it. At first the publications were mild. But as any war, things got out of hand.

This is wrong. Un-husked Black Walnuts accidentally killed the children. What you have here are English Walnuts. Black walnuts and English walnuts come from completely different trees/countries. ...Yes you ARE right. The same happened with the murdered children-tomatoes. It turned out they were born and raised in the USA and the nuts who murderd them were also from the same country. Typical war-press. Just take a photo and tell a fairytale... But lucky enough the English Walnuts that were captured in a spanish garlic-net were left free short afterwards. That is at least the 'official version' we read in the Tomato-TimesHas the world gone nuts? ...In a tomato-war anything can happen...
